Fluffiest GF Pancakes!

Happy 1st of July everyoneee!✌🏻️

On this first breakfast of July finally I made my first 3 stacks pancake using @lonijane's e-book but I substituted brown rice flour with red rice flour. 😅 

Drizzled it with Homemade Coconut Chocolate Syrup and put Banana Granola that I made 2 days ago. I've almostt put everything with that granola cause its so delicious and crispyy! 😋

I love ittt, especially with Coconut Choco Syrup! Just had my dinner. It were 'Urap' (Indonesian salad with Coconut Dressing), and a pinneaple. Oh! And one small slice of watermelon.😋

Today's workout were @kayla_itsines's week 7 - Wednesday and @blogilates's July workout Calender. Finished both of them and fell asleep with that smelly clothes. 😂

Fluffiest GF Pancakes with Coconut Chocolate Syrup
Ingredients
Pancakes :
¾ cup buckwheat flour
¼ cup red rice flour
1 tsp baking soda
1 tsp vanilla extract
1 flax egg (mixed 1 tbsp flaxseed + 3 tbsp warm water for 15mins)
1 cup almond milk
Coconut oil (for cooking)
Coconut Chocolate Syrup :
½ tbsp raw cacao powder
2 tbsp maple syrup
½ tbsp coconut oil

Methods
Pancakes :
1. Preheat a non-stick pan to low-med heat. 
2. Whisk together flours, baking soda and vanilla extract until combined. 
3. Add flax egg and almond milk and mixed until well. 
3. Spray the pan with coconut oil, and pour some of the mixture in to form a circular shape. 
4. Flip back when it already bubbles and the edges turned matte. 
Coconut Chocolate Syrup :
1. Fill a bowl in halfway with boiling water, then place a smaller glass bowl inside to form a water bath. 
2. Add the coconut oil and allow it to melt in.
3. Add the cacao powder, and maple syrup. Mix well to get rid of any lumps.
4. Drizzle it on the top of your pancakes!

Pure Chocolate


Yesterday I made Pure Chocolate that only need 3 ingredients.
It turned out lil bit sticky, maybe I did a wrong method. Butt the taste is good, even my parents said that it was delicious. 



 Couldn't take photo of yesterday cooking cause it was dark already! 😓 and took picture today with good lighting outside.

Pure Chocolate Recipe
Yield : 20 chocolates

Ingredients
½ cup cacao butter
3 tbsp raw cacao powder
3 tbsp maple syrup (or rice syrup)

Methods
1. Place all the ingredients in a sauce pan on low heat. Heat really gently until they melted together, but don't let them boil. 
2. Spoon the mixture into moulds.
3. Freeze for about 1 hour and then store in the fridge.

Failed Overnight Oats!

Good morning! Toasted Wholewheat Bread and Mashed Hard Boiled Eggs for my pre-workout meal. I used 2eggs cause the eggs are so small. 😂 Waiting for 30mins until start my workout. Tick tock tick tock. 🕤


Lunch today was Caramel Oatmeal (recipe from IG : @theoatlady). First time tried this and its gonna be my one of my fav, thanks! Recipe :
1/2cup Oats
2 Dates, pitted and torned
Splash of vanilla extract
2 splashes coconut milk
Coo all of them in a medium heat until the perfect consistency. Top it with anything you like!

Today I topped it with strawberries, banana, @bali_asli's Cashew Butter, @balibuda's Roasted Pumpkin Seeds, @bigtreefarms's Cacao Nibs, and a drizzle of honey.🙌🏻 Anyway I just made Snapchat acount so its easier to see my meals. Add me 'thefoodsis' 👻

Dinner today is Overnight Chia Pudding with Oats. Recipe :
🍞 3 tbsp oats
🍼 4 tbsp milk (I used Low fat milk)
🍦 2 tbsp Greek Yoghurt
🍪 2 tsp Chia Seeds
Mixed them all together in a jar and put it in the fridge for overnight. Enjoy it with your choice of toppings. I used Cookies & Cream Granola from @grano.lady, @balibuda's Dried Figs and Apricots, @bali_asli's Cashew Butter.

It should be Overnight Oats but I read the wrong ingredients. Should be 2tsp Chia but I put 1tbsp Chia (realized it when I already threw 1 tbsp). And it turned out too creamy! 😂

Easy-to-grab Fruit Salad Jar


Instead of making the same wrap with this morning's leftover, I made some easy-to-grab Fruit Salad Jar. Simply add any fruits fruits you have (or want) and layered it one by one. Put some Yoghurt (I used the plain one) on the top of it and put Granola for more crunchiness. Put the lid and you're done! 

What I used (and layered) :
1 banana, sliced
1tbsp pumpkin seeds
today morning's leftover
2 strawberries
½ apple, sliced
granola

Fruit Wrap


Should be running at Sanur Beach but I can't woke up. So, no LISS for today, too bad. This was me breakfast, Fruit Wrap!

What I used :
1 homemade wheat tortilla
3 strawberries, diced
1 banana, sliced
½ apple, diced (for crunch)
3 tbsp plain yoghurt

Direction :
Mixed all the fruits and yoghurt in a bowl. Put them inside the tortilla and wrap it. Drizzle 1tbsp honey, topped with frozen berries and chia seeds. Done!

Oh btw I spread half of the recipe for the wrap, cause my tortilla is too small. I might use half of the recipe for my lunch or dinner.
